Kosher Salt and Freshly Ground Black Pepper
6 Cups Coconut Milk*
2 Cups Vegetable or Chicken Broth
1 Tablespoon Coconut Oil
1 Small Onion, finely chopped
1 Red Bell Pepper, finely chopped
2 Small Carrots, grated
1 Cup Potatoes, diced
1 Sprig Fresh Thyme
¼ Teaspoon Cayenne Pepper, or to taste
