4 boneless, skinless chicken breasts, cut in half crosswise
⅓ cup cornstarch (arrowroot for paleo)
½ tsp salt
1 tsp freshly ground black pepper
olive oil, 2 tbsp
1lb (450g) white mushrooms, halved
½ cup (125mls) marsala wine or dry sherry (not cooking sherry or wine!)
1 cup (250mls) gluten free chicken broth
2 tablespoons chopped parsley to garnish
